Rabbit Casserole

Hi All,

 

I must share the up till now I have lays given my rabbis away as I just did not fancy eating them ,however my ferrets bolted two last Tuesday so I plucked up the courage to try and I am very glad that I did.

 

My Receipe as follows.

 

Cleaned jointed rabbit soaked in saltwater for 24 hours.

 

All pieces seasoned and browned in a frying with olive oil and a little garlic

 

Then each piece wrapped in cheap smoked bacon and put in a covered casserole dish with about a half in of water then in the oven for 1 hour at 150c after that remove for oven and potatoes and carrots and one tin of chicken cook in sauce the another one and a half hours at 180 c.

 

The result was absolutely delicious the rabbit was so tender better than chicken,I will be out tonight and hopefully pop some more.

Sounds tasty, i am having rabbit stir fried tonight. Have just shredded a boiled rabbit, its going in the wok with chopped onions, crushed cashew nuts, ginger, lemon juice, bean shoots, soy sauce, then served on a bed of noodles.

 

 

Update, all i can say is, it was very very tasty. :good::yes:
