Goose on the BBQ

I marinaded some greylag goose last weekend for a BBQ we were invited to and for a first attempt it went down really well. I used 10 goose breasts which were sliced into 3 to make bits like frying steak then I gave them a bit of a pounding with a meat hammer and then marinaded the meat for 3-4 hours. The only complaint I had was about the sinew running through the meat which is hard to avoid. I think the next time I try it I wont slice the breasts I will chunk them up into bite sized bits and put it on skewers with peppers and tomato. Apart from the sinew the meat was very tender and some people thought it was steak.
