I fished the Blackwater estuary in Essex as a lad and would think similar conditions for you. perhaps you should look for something broad in the beam, shallow draft, light enough to manhandle when you beach, with enough freeboard to keep the sea out when it gets rough, because it will, bearing this in mind there are several out there new and second hand,

Perhaps the best advice is to look at the traditional boat that evolved in the area you intend to use it in and get one of those or at least one that resembles it closely

Have you looked at the Bic boats? The old 252 (second hand) or the newer replacement 245 are the ones to look at. Can be loaded on to roof bars or into a truck/van and hauled over land single handed. These are very popular with carp anglers on vast gravel pits for transporting kit, baiting and retrieving snagged fish, and a member on here has one (252) for the very purpose you want one.

 

Perfect for the Ouse Washes. Carries two plus kit/dog, unsinkable hull design, superbly stable and comes in a good colour. Can take a small outboard for crossing/travelling the 100 foot and Delph.

why not get a Canadian canoe great for protected inland waters, if your going in the sea get a sea boat

I was taking the wee wee it looks like two fellas in a camo bath tub.

 

The otter does look good for inland water.

 

None of the smaller boats would be steady enough for me to shoot from and hit anything.
