Favourite duck to eat?

TEAL no question, if they were as big as a goose few might bother with anything else I feel! Canadas have a very undeserved reputation for not being great on the table. Ok as with most Fowl it depends on what they have been eating but its a mistake IMO to treat it like goose at all. What I do is cut the meat off and slice it across the grain to its not tough and use it in place of Beef. Makes great Spag boll and meat and potato pies etc. Coriander and black pepper are the spices of preference.

 

My least favourite is Shoveler mainly like I say above though "depends that they have been eating" but as they sift and filter with that big bill they are eating little water snails and their like and any duck that's been feeding on such things generally tastes a bit rank and has a certain off putting odour during the cooking process. If you shot shoveler that had beed feeding on roots and seed I recon they might taste great, its just that is not their usual mode of operation.

 

I have had one Canada I binned after tasting it had been feeding inland on Lord knows what but it certainly wasn't edible! I also shot a widgeon at the same venue and that was just the same- Horrid !

It all depends what the birds have been feeding on. I like teal , but I have shot some pretty rank ones over a beet settling pool. For me a corn fed mallard takes some beating , but a inland meadow feeding wigeon comes a close second.

 

As for geese canadas are my no 1. I had a white front a few years ago that was awful and one or two greylags have been real fork benders though the taste was ok.

Teal for me.

Mallard close second.

Never tried gadwall or pintail.

Worst I had was a tufted, no idea what it had been feeding on but I only had a mouthful which was quickly spat back onto the plate, I don't think the dog even enjoyed it although being a lab she swallowed it very quickly.

Diving duck eat a lot of coruscations and such, like snails it taints the meat. If you think about it man eats few meat eating animals. Shell Duck although no longer legal to shoot is reported to be no loss to the table (it has the same diet)
