Rabbit with mustard

Found this in a cook book I bought , thought those of you who manage to bag a few might be able to try it.

 

1 tbsp plain flour, 1 Tbsp English mustard powder, 4 large rabbit joints, 2tbsp butter, 2tbsp oil, 1onion finely chopped, 2 thirds a cup of beer, 1 1/4 cups chicken stock, 1tbsp tarragon, 2 tbsp brown sugar 3 tsp English mustard, salt and pepper.

To finish 4 tbsp butter 2 tbsp oil 1 cup of bread crumbs, tbsp chives 1 sbsp tarragon.

Oven 160" gas 3,

Mix flour and mustard powder, put it on plate.

Dip rabbit joints in it covering all joint and reserve what's left.

Heat the butter and oil in a heavy flameproof casserole dish, brown the rabbit transfer to plate.

Stir in onion cook till soft.

Stir in the reserved flour, 1 min, add beer stock and vinegar, bring to the boil,

Add sugar and pepper, simmer 2 mins,

Return the rabbit and any collected juice that's on the plate to the casserole dish cover tightly and place in the oven for 1 hr.

Stir in mustard add salt to taste cover again and cook for another 15 mins,

To finish heat butter and oil add bread crumbs in till golden add herbs and stir transfer rabbit to plates and sprinkle bread crumbs over each.

Done, enjoy

A wok, put in a big jar of french whole grain mustard add two pints of the best double cream,season, put in two jointed rabbits,Bring to the boil and turn down to the lowest heat it should bubble like a Volcano. Leave alone for 2hrs. Delicious .

Ive cooked rabbit a lot this way very simple and a sauce to die for. Its a Keith Floyd recipe, he cooked it in a wheel barrow full of hot charcoal.

I tried a recipe once, that was delicious. Using a large stock pot, put one or two jointed rabbits in, add seasoning and some whole grain mustard. Add 2-3 ltrs of dry cider and simmer until the rabbit it tender. Stir in a pint of fresh double cream and simmer a little longer. Then serve with creamed mashed potato's or rice.

Sound delicious, but it's no wonder floyd died of a heart attack... 2 pints of cream!!!
