Deep fried pheasant

Tried it before at the restaurant, Kiev style, right when wild garlic was in season and I was picking it myself. Went down really nice, and kids will eat anything that's crispy or deep fried.

 

Used to do it with rabbit too when I had surplus, I'd confit the rabbit peices really slowly, then cool them down, coat in a mixture of flour and dry spices and herbs then shallow fry. Kentucky fried rabbit!
