Pheasant sausage with parsnip, potato mash and roast parsnip!

Nice quick way to cook parsnips to a turn!

 

Peel trim and cut your parsnips, place in a plastic bowl and pop a tablespoon of butter on top. Place in a microwave for 2 mins on full power! Take out and toss them about to make sure they are all coated in butter and return to the microwave for another 1 minute 30 seconds,

 

Decant straight into a oven tray and season with Sal and pepper, also a good dash of red wine vinegar, place in a hot oven and shake at 15 min intervals to ensure even browning!

 

The sausages are my Tandoori pheasant sausages,

 

Mash. Peel equal amounts of potato and parsnip and cut the parsnip slightly smaller than the potato's as they take a little more to cook through. Once cooked drain and add a good dollop of butter and mash through! You won't need milk as the parsnip makes the mash creamy enough!

 

Salt and pepper to taste and dish up!
