The reason they are complicated has to do with the meat.

At this time of year the rabbiys are mainly old and therefore need braising or stewing.A 3/4 grown bunny in september is the rabbit to roast IMO.

If you have a large rabbit casserole it all day in a slow cooker, the long cook time tenderises the meat, and what is left, add oats and blend into soup.

A recipe I have just been given is take a young rabbit cover in bread crumbs and grill. There are lots of young rabbits on one of the farms I shoot at the moment, so I look forward to trying this soon.
