northy Posted August 1, 2006 Report Share Posted August 1, 2006 hi, I bought a very expensive set of Japanese kitchen knifes a few years back and they came with “sharpening rails†that clip on to the back of the knife so that you have no choice but to get the correct angle, when using a stone. I have found a site that sells them for $8.00. Only thing that may be a problem is that, as someone said before, Jap knifes often use a shallower angle to become razor sharp.
