Got some pigeons, dont know what to do with them.

Just shot some wood pigeon today, i want to do them justice in the kitchen. whats the best way to cook them. :good::good:

 

My way...........Pigeon breast marinated in red wine and thyme over night with a couple of crushed cloves of garlic.

 

Take em out and pan fry them in LOTS of butter for 3 mins one 1 side, 2 mins on the other. Salt and pepper.

 

Remove from heat and rest........

 

In same pan, some nice flat mushrooms, cut THICK and fried off in butter.

 

Reduce marinade by 2 thirds.............add a good *** of butter to glaze, bit of game stock...reduce again till it coats back of spoon..

 

Serve up with some Julienne of carrot and courgette...some new potatoes...

 

Job done.
