Advice needed please

Doing a game tasting evening Starters Pigeon breated sauted on toast.... Partridge, bacon lards? with?

Duck, butternut squash strips, courgette strips with carrot bits, in a lemon butter. British cheese board and Scottish Oat cakes.

Need a decent veg to go with this lot, any suggestions?

PS DO NOT like parsnips (Burp)

Veg to go with which course?

For the pigeon I suggest a home made coarse pease pudding spiked with nutmeg.

Its not clear if the partridge and duck are separate courses, if they are then perhaps a pea pure with cardamom and a hint of wild mint for the partridge and a thick red berry coulis, served warm with a swirl of balsamic for the duck.

Just an idea

Well all went well.

Stuffed the duck with Peas pudding with butter and seasoning 1 partridge with orange and one with chesnut

Honey roast parsnips butternut squash Roasties done in Goose fat.

All liked it, some more converts and orders for any more :stupid:

Quite surprising that most had not tried game before, but all said they would be now.

Taking 2 of them clay shooting on Sat for 1st time, as an introduction to our sport, fingures crossed for decent weather.
