Green mold and fur on prosciutto ...

Mould on ham is not fatal, but indicates atmosphere isn't dry enough, a dehumidifier for a few days in the same space where it is hanging would be ideal.

I normally hang mine in an old airing cupboard with a mini dehumidifier in bottom, so it gets heat from hot water tank and dried by dehumidifier.

As far as I'm aware, it's a bit like a hung steak and this is kinda meant to happen if left alone at the wrong temperature - Cut away the horrible bits and the bit inside should be lovely - Use your nose on it and try to eat a little (or give some to the neighbours screaming kids).

Good Luck!!
