Mike737
As we have a prolific quince bush, but the pantry shelves are stacked out with the last two years' worth of quince jelly, we decided to try something different this year. So there is about 10kg of quince, steeping in brandy and gin. (Seperately, before anyone asks...) Blisters on my knife hand from chopping them... It won't be ready for this Christmas sadly, but should be well drinkable by next! About 4 months in the spirit, then add the sugar to taste. Not too much tasting on school nights though!!! Mike.
