Xmas dinner tips

I am now on my 2nd bottle of red, preparing Jamie Oliver's "get ahead gravy" as I have done for the last 6 years or so. I sub the chicken wings for pheasant legs, and have added a woodcock carcass for good measure.

My festive bird is brining as per Nigellas super juicy recipe ... again, a winner for many years now in our house.

What are the "must do" dishes in your Xmas arsenal?

mix sausage meat and paxo together add shopped soften onion egg and seasoning then half a lemon squeezed and then mixed together

put it in a casserole dish cover with tinfoil pop it in the oven fan oven 160 25mins uncover then paste best butter on the top for another 20 mins to make it brown.
