Smokersmith
I am now on my 2nd bottle of red, preparing Jamie Oliver's "get ahead gravy" as I have done for the last 6 years or so. I sub the chicken wings for pheasant legs, and have added a woodcock carcass for good measure. My festive bird is brining as per Nigellas super juicy recipe ... again, a winner for many years now in our house. What are the "must do" dishes in your Xmas arsenal?
