Deer fat

This should possibly be in the food section but may get more views here. Noticing my fallow are holding a lot of fat this year and was wondering if to throw it in with the meat while mincing. I did see on one of the meat hunter programs that the chap was saying to cut and chuck the fat as deer fat isn't good eating. Anyone throw some light on this, is it not worth using?

It is a bit strong and easier to trim it off and use pork or beef dripping. Making game pie I use smoked streaky bacon and pork belly in equal amounts with the venison trimmings and breast meats from various birds. Suggestion, try mincing or better still chopping some pickled jalapenos and putting them in the mix.

Ferrets it is then, I have trimmed it off now and yes loads of fat around kidneys as well, fallow seem to be doing real well.

That's interesting, it appears lots of deer have lots of fatty deposits this year, I can't help but wonder if the 'greener farm' stewardships are making them pre-diabetic😄
