MickeyXR
Hi all, have booked a carcass & butchery course and I would like to get some decent butchers knives and cleaver etc to suit. If anyone has any or knows of where to get some, please let me know? Must stress though, I'm after some real good quality blades to last so I only have to buy once. Thanks all - Mickey

gummy_bear
1+ for nisbets iv got few knives form them, they have a free next day delivery for over £50 here a good video about victor inox - quality / price siwbo is the professional range of Victorinox http://www.nisbets.co.uk/1/Kitchenware-and-Knives-Swibo/c03a0101.r12.1.1 fibrox range is nice, very good grip, but I found them a bit rubbery on the handle - this is my personal view you will also need a good sharpening system
Fatcatsplat
I'm on a few BBQ catering groups on Facebook and everyone on there shows off their flashy new Japanese/German blades and then go back to cheap, cheerful and very, very effective Victorinox

R6demon
Always been impressed with the victorianox range of knives when I was chef'ing. I bought some VERY expensive Gustav ones but I keep returning to the VN's
Dougy
+1 for victorinox, butcher's have been using them for well over 40 years. What more can you ask. Edit. Spending £100s will not make you a better butcher. No waiting for someone to say they stay sharper for longer. ;-) Edited February 28, 2017 by Dougy
