Do both sides then prop them up on edge (do 2 and lean them against each other) to crisp the fat and avoid overcooking. cut the fat every inch or so to help cook and keep shape. rimfire4969 Posted March 20, 2017 Report Share Posted March 20, 2017 All our chops are proper think from our own pigs, as already said season grill or fry and stand up on the skin side. We have ours with some excellent apple chutney that I bartered a shoulder joint of pork for including some other chutneys and jams. Can't beat a good barter.
