Vacuum packer

Does anyone have any experience of vacuum packers to preserve food? I'd be interested to know how long game would last in the freezer if vacuum packed and whether or not freeze damage is prevented?

Yep, we have discussed these at length before, but for your information they are the bees knees for packing any produce for the freezer. I buy Lakeland bags, a bit more expensive but they have a thicker plastic and it is crimped which I believe made prevent freezer burn because I have never witnessed any. Brilliant for packing peas/beans even if you buy from the store. I buy the largest pack I can and then quickly split them into small two person servings and vacuum pack before they defrost. Then into the freezer. All meats last a long time. I dug out a haunch of fallow venison and the date was some five years previous. It was delicious. Would not be without ours.

You will find the floor of your freezer is no longer swimming with loose peas, beans etc.

I like to do something different for friends at Christmas and this year, I've been thinking about mini hampers, to include duck breasts, pheasant breasts, trout fillet, wood pigeon pate, a game terrine and a rabbit something or other, blackberry jam and a small bottle of sloe gin - either caught, shot, picked or brewed by me.

 

Seems the vacuum packer might be just perfect for making.....

 

Anyone any ideas for the rabbit?
