Cod shoulder wrapped in serrano ham

Made this a week or so ago and going to give it another whirl this week with a twist.

2x shoulder steaks from a cod of around 5-6lb; This is the fillet from the top of the head along the lateral line and stops in line with the vent, no belly flap, no tail fillet.

4-6 slices serrano ham

2 thin slices of butter that are same length and width as the fish

The addition to the recipe is a small amount of black pudding. If the BP is slightly hard or coarse then add butter to make it like a pate consistency.

Lay the serrano ham on a board on the diagonal, and then add some BP around the same length and width of the cod and place the cod on top, the butter on top of the cod and wrap the ham up the sides and secure with a cocktail stick if necessary.

8-10 minutes in a fan oven at 180`C, new potatoes and British green beans, happy days.
