i loaded as per lead with Nobel 82 powder.By "lead" i mean by volume not by weight. I found 2oz of bismuth came up to the top of the wad  and worked just peachy instead of 2 1/4 oz lead. It  dropped geese  with the Bismuth #3 at 45 yards from my single stevens 10.Your 2 7/8 gun obviously  less shot /powder but principal is the same .Bismuth is only a piddly bit lighter than lead so lead loads will have a good grounding for any bismuth you load in its stead. You will at some point have to say hello to yer baws and simply go for  it  and load as per lead  but a tad lighter ,  as i did ,as there is  little if any data on 2 7/8  10 bore non toxic loads i have seen.heres some eley 10 bore 2 7/8 data. should start you off.
