JDog
Woodcock will be this evening's dinner. Roasted for 15 minutes in a hot oven covered in bacon. A strong Merlot will go with them.

JTaylor91
I had my first woodcock for lunch this afternoon. Seared in a hot pan with butter then finished off in the oven. Served on some fig and balsamic braised savoy cabbage.

Roasted as above with twice cooked game chips, roasted broccoli and an onion sauce. Mine was set on a piece of granary bread to catch the juices. Rob85
The first ever woodcock I shot (17 years ago) I tried to cook without knowing what the heck I was doing, I hung it for 3 days and then tried to pan fry the breasts with onions and some gravy and it was minging. I really need to get another and try it properly as per some of the methods I've seen on the forum!!

I cooked the ‘traditionally’ first time I had them and have opted for drawing them now. I have a brace in the freezer for over the Xmas period - can’t wait.
