Roasted as above with twice cooked game chips, roasted broccoli and an onion sauce.

Mine was set on a piece of granary bread to catch the juices.

The first ever woodcock I shot (17 years ago) I tried to cook without knowing what the heck I was doing, I hung it for 3 days and then tried to pan fry the breasts with onions and some gravy and it was minging.

I really need to get another and try it properly as per some of the methods I've seen on the forum!!

My absolute favourite game bird - you’re a lucky man. From the looks of things have you cleaned the innards out? I cooked the ‘traditionally’ first time I had them and have opted for drawing them now.  I have a brace in the freezer for over the Xmas period - can’t wait.
