It’s actually an advanced technique in that the fermentation gas keeps them up there until it slows down and they sink back to the floor so you know when it’s ready. jasper682 Posted December 21, 2020 Author Share Posted December 21, 2020 (edited) It just happens when you add the lemon peel/ alcohol to the sugar water and boom. Come back to it in a few months and it starts to clear. It's usually long gone before that happens. Best when recently made and served ice cold. Jasper.
