Custom kitchen knives

Perhaps not what you are looking for (in that they are not strictly 'custom'), but Zwilling (I believe the high end brand for J.A Henckels) and Wusthof both make very good knives.  Not cheap, but a good deal less costly that 'custom'.  I have some Zwilling - and some older Sabatier, but the Sabatier name has also been used on some lesser quality things.  You can still get the older types which I think are are the quality they used to be.  There is some explanation of this here https://www.sabatierknivesuk.co.uk/content/4-about-us

My best loved knives are not stainless steel so I am on the look out for alternatives to stainless steel,

when I was butchering I tended to buy Victorinox, their stainless steel was not to hard, kept an edge well and was easy to return to an edge with a steel,

Those knives may be good, they may even be corrosion resistant but theŷ are probably Chinese at that price and steel quality can be variable. Is they are Chinese, it is unlikely to be vg10 as that doesn’t leave Japan much. Personally, I think they would be worth a go.
