Wb123
I seem to remember about a year ago posting on a forum about maturing mild cheddar at home, finding nobody who had done it, and then promising to provide an update after giving it a crack. I can confirm that the tesco value mild rubber cheddar turns into a nice crumbly very nice and slightly crunchy cheddar after a year in a corner of the cellar in the original packaging. Best cheddar I have had at <£10/kg ever.
