Some beef ribs I cooked in the UDS last week.

And a chicken on the rotisserie attachment. Love the UDS, pretty much set and leave, holds temperature within 10° for hours unless the wind changes significantly.

Iv thought about fish, seen them done over a open fire nailed to planks, they look amazing.

I got the offset on the go on the Tuesday before when it was sunny did some chicken n stuff.

There's some cracking looking food there mate!  Could I ask what is it that you've used for the food grating/grill in the offset cook chamber.  I'm looking to make something similar and have been looking at different grill options - yours looks spot on.

Its from a firm in Warrington that make gratings, I'll find the company/link for you later.

I got it from The Mesh Company but via Amazon.
