Highly recommend it 👌🏻 start with some Chinese water deer if you can, it’s beautiful and quite a sweet meat.

 

The bolognaise looks banging too 👌🏻 some garlic/cheesy garlic bread on the side and we have perfection

 Yes, when the dish is ready to serve, I put the pasta in the bowl and add garlic infused olive oil and black pepper, then spoon on the bolognese sauce and add more black pepper.

If the mood takes me I also add fresh grated parmesan.

This time I did not add cheese.

The Barolo was Trocken 2017 from LIDL ( 🤨) discounted to about  £15 but nice occasionally as a treat

I used Tagliatelle for my Hare Ragu although most recipes for Hare Ragu  use Pappardelle.

I am happy with Spaghetti for Spaghetti Bolognese 😁

Venison needs to be pink in the middle unless you are making stews when you can cook it slow and long (especially the poorer cuts ) 

I have attached a picture of my Roe Fillet Carpaccio with Tagliatelle which is cooked 1 minute  each side - very very hot pan (smoking) with Rapeseed oil as it burns hotter than Olive oil.

 

Note For Ditchie - you don't need any teeth to eat this 😁

Most venison sausage eats dry, unless made with a large percentage of pork fat (I forget the actual quantities). 
I eat a LOT of venison and a lot of sausages and venison sausages are my least favourite sausage.

hello, that maybe so these days but i am going back many years when i drove along the A272 there was a great game butcher so we always stopped to buy venison sausages for my family,

dont use spag' anymore always tagertelli now ...just works better.....i like to mix it all up in the frying pan before serving...sort of dry's it out....

 

scratch made chili-con-carni for tomorrow...........got a ping meal today
