I tend to use pork belly with mine, as it stops them drying out as you rightfully suspect. The actual recipe is really personal choice of seasonings etc.

Here's a recipe I got from a previous post by NTTF :thumbs: :blink:

 

VENISON BREAKFAST SAUSAGE

1 lb. deer or big game, ground

8 oz. lean bacon, sm. pieces

3/4 tsp. salt

1 tsp. sage

1/2 tsp. ginger

1/4 tsp. Pepper

 

Grind above; or mix well. Shape into thin patties and fry until browned and done. Makes 1 1/2 pound sausage. Can also be frozen uncooked.
