Should you hang a pheasant before plucking/cooking/freezing? If the answer is 'yes', and I presume it is, where is a good place? How long for? and doesn't it go off not being in a fridge/freezer? What does hanging do, and whats the difference if you cook it without hanging. John_R Posted December 1, 2008 Report Share Posted December 1, 2008 Hang in a cool place, like the shed or garage for about a week, unless the weather is very mild as then you run the risk of it being fly-blown. I like to separate braces so the air can circulate all round, rather than hang them tied together. Always hang a bird from the neck. This helps the flavour develop, and tenderises the meat which can be a bit dry and tough otherwise. Frankly, pheasant can be dry and tough even after a week, but that's just the way it is! I have been thinking of making a mini game larder with fine mesh sides so the air can flow free but flies cannot get in. Quote Link to comment Share on other sites More sharing options...

I don't need it to be chilled, merely something to keep the flies off. This time of year it is cool enough not to worry about things rotting. It only needs a sunny day to wake up a blowfly, there was one buzzing in my car after yesterday's shoot before we had even got to the pub afterwards. What I plan to make will be mounted inside the garage up on the wall, and only be about a foot deep, a few feet wide and also a few feet high.
