Ingredients 1tbsp veg. oil 1 garlic clove 2 spring onions 1 small chilli (optional) soy sauce (dark preferably) 1 pouch of hoisin sauce (I used the cheap co-op stir fry stuff but any will do.) cucumber salad leaves (lettuce to the old duffers) wraps breast meat of duck or pigeon cut into thin strips. method Finely chop garlic clove,1 of the spring onions and the chilli. Flash fry in the veg oil (dont burn) add the breast strips and brown. Add about half of the hoisin sauce, fry until the breast meat is 'sticky' with the sauce. turn off the heat. Thinly slice the remaining spring onion and the cucumber. Warm the wraps (ten secs in the microwave for the lazy among us!) streak a teaspoon of the uncooked hoisin down the middle of the wrap, add lettuce/leaves, some of the spring onion and cucumber strips and the breast meat, roll wrap, repeat till all ingredients are rolled ready to eat. slice the wraps in half and serve warm or cold with a cold beer.
