Roast Duck

Had a wander round my syndicate woods yesterday morning, wasn't very fruitful, a woodcock and a pheasant, after that a few of us got together and walked the dykes on a friends farm, this was a lot better than the morning, we bagged 12 pheasant in total, we had to hang around for an hour or so for darkness to fall over the pond for the final part of the day's shooting, the wind was wild and it was very cold so it wasn't the best place to be, as soon as the ducks started to come the cold and wind was forgotten about, fantastic night with a total of 28 duck picked (including my first left & right on duck), an absolutely brilliant day with some really good birds (wind assisted)

 

Today i fancied some of the duck for dinner, I prepared 4 breasts in a garlic and black pepper marinate, popped in the oven for 30 mins, took the foil off and back in for another 10 mins, lifted out and left to rest, served with mash and some green beans, was bloody lovely.
