sandersj89 Posted September 5, 2007 Report Share Posted September 5, 2007 Axe's Spanish potato recipe reminds me of one we do quite often but it is more French than Spanish. No measurements but the below fills a fair sized ovenproof dish and will feed 6 people easily. Some good waxy potatoes simply scrubbed clean and not pealed. Slice into 1/4's ot 1/8ths depending on size and place in an ovenproof dish. Roughly slice an onion or two and mix in with the potatoes. Crush 6 large cloves of garlic and add to the dish, season with salt and pepper and add a generous slug of olive oil and mix everything together so that it all coated with oil. Place into a preheated oven, 200 degrees Celsius, for 15 to 20 mins stirring a couple of times so things dont stick to the bottom of the dish. Next get some good slices of ham or good dry cured bacon and place a layer over the top of the potatoes and back into the oven for 10 to 15 mins. Meanwhile grate some hard cheese, cheddar is fine so is gruyere. I like to use a mix of gruyere and parmesan. Remove the dish from the oven and sprinkle the ham over with the cheese. Back into the oven for another 10 or so mins until the cheese starts to colour. We some times just eat this as a simple all in one dish or sometimes have it as a side dish. It is also fantastic cold.
