Pigeon breasts on puff pastry with red onion jam

As i few people have asked me for pigeon recipes i thought i should start posting them.

This is an easy way, can also be made from scratch if u want to know how PM me.

 

You will need:

10 Pigeon berasts

1 small pack puff pastry

1 jar red onion jam

1 bottle good balsmic vinegar

1 egg

 

Roll out the puff pastry about 1cm thick,and cut in to discs about 15cm.(should get about four)Beat the egg and brush on to the pastry discs.

Place a table spoon of the red onion jam in the middle of each disc, and place in to a hot oven 200c for 20 mins.

Heat a pan with a little oil in and seal off(brown both sides) the pigeon breasts and place in to the oven for 10mins(for pink).

When the pigeon is cooked remove from oven and let rest for 5mins.

When the pastry discs are golden remove from oven and top with pigeon breasts,slice each one in half and devied between the four discs.

Top with a drizzle of the balsamic vinegar.

Sit down and enjoy.
