vole Posted July 9, 2008 Report Share Posted July 9, 2008 (edited) You need.. 4 portions of cooked Basmati rice,gone cold. half a cooked chicken,chopped,shredded or whatever.Breast AND thighs etc. 4 eggs beaten in a bowl with tablespoon light soy and salt n pepper. One chopped onion. 2 garlic cloves. SESAME oil and veg oil. Cup of frozen peas. Heat up your Wok with splash of vegetable oil. Make a basic omelette with half the egg. Remove when firm and slice up. More oil in Wok. Stir fry onion till transluscent but crispy still.Add garlic and fry one minute. Add good splash of SESAME oil (nothing else will do) and the peas.Heat them thru. Add the rice and stir round till coated. Add the rest of the raw egg/soy mix and stir more. Chuck in the chicken and heat thru. You can put in fresh ginger at an early stage or prawns even if you like.Spring onions are good too. With a couple of attempts you will get this tasting better than your local takeaway. This is a Ken Hom dish and half a billion Chinese agree this is worth a go. Dark Soy and Chilli oil is a good garnish.
