Wookie Posted August 4, 2009 Report Share Posted August 4, 2009 Ingredients: 1 rabbit, stripped of meat 3 shallots 2 cloves of garlic (or to taste) A half dozen or so runner beans (home grown of course!) Milk Butter Plain Flour Rice Black pepper Main dish: Take the stripped meat and cut into smallish chunks. Finely slice the shallots and garlic and add to a frying pan containing hot oil. Let the meat slightly brown, but keep it moist. Chop the runner beans into 1cm wide strips (after removing any stringy bits) Remove the rabbit and most of the shallot and garlic and place in a bowl. cover Add the runner beans to the frying pan and heat. Add about a tablespoon of butter to the frying pan and reduce the heat. Let the runner beans simmer in the butter until slightly soft. Remove the runner beans and the remaining butter to the same bowl as the rabbit and cover Get the rice on the boil Sauce: Take about a tablespoon of butter and put in a small saucepan When the butter melts, add about a heaped tablespoon of plain flour to the melted butter and stir with a whisk. If the mixture looks like dough and all the flour has absorbed into the butter, it's good. Add a slug o milk, stir with whisk until you get a paste Add a bit more milk, stirring al the time. Repeat until you have a decent thick, lump-free sauce. Chop Roquefort (I like to use most of a bought wedge) into bits and add, with a bit of black pepper. Stir until there are no lumps left and the sauce is smooth. Final prep: Drain the rice when it is cooked. Give the rabbit and runners a quick blast in the microwave until hot and spoon on top of the rice. [Liberally] cover the rabbit, runners and rice with cheese sauce, sprinkle with black pepper and serve. I would recommend a nice, dry white, maybe something new world to accompany.
