My lovley recipe for pigeon stir fry
Ingredients:
6-10 clean pigeon breasts
Lemon Juice
Ground Ginger
Soy Sauce
Onion
Egg Noodles
Stir Fry vegetables (cabbage,bamboo shoots,carrots etc..)
hoi sin sauce
First slice the pigeon breasts into slices and put into a bowl with the lemon juice, soy sauce, ground ginger and some salt & pepper, leave to marinade for atleast an hour.
Once marinaded heat up a little oil in a wok or frying pan (rapeseed oil is good but dont use olive oil as this smokes alot when it gets to the required temperature), add to the hot oil the Egg Noodles and fry for 3 mins, then add your stir fry vegetables and fry for a further 3 mins.
Once that is done add your pigeon breast and hoi sin sauce and cook for approx 3 more mins until the pigeon is done but slightly pink in the middle, dont over cook the pigeon as it gets tough. serve and enjoy whilst hot
