I've made this a few times now with breast meat from pheasants, basically make in the same way as any other type of Thai curry but use pheasant rather than chicken.
I use this sauce, coconut milk, onions and any green veg to hand (leek and aubergine in the picture) and I use plenty of Fish Sauce, bit of soy, honey, maggi sauce:
And the result is something like this. It is absolutely delicious, works much better than chicken.
