Cooking Crowns/Breast

Never tried this before, but it works really well.

you end up with the most succulent meat.

works for any kind of bird i would imagine.

 

Partridge Crown...

Take a partridge crown and season well, i also did a chicken breast (for the misses - see other thread!)

Get a large pan, and put in chopped vegetables (carrot/onion/celery) and a chicken stock cube, bay leaf, with a couple of pints of water.

bring to boil, then put crown in and simmer for 10 mins.

take off heat but leave crown immersed for another 10 mins.

then remove meat from stock and finish in hot oven for 10 mins, dotting the crown with butter.

use the stock to make a gravy.
