TomV Posted December 29, 2009 Report Share Posted December 29, 2009 (edited) Made this the other day, a slight variation on some recipes I'd found: 1 good sized rabbit 400g of pork belly 1 lemon Whiskey Salt and pepper Streaky bacon Take the meat off the bone and chop into smallish chunks Take the rind off the pork belly and chop into small pieces Put in a mixing bowl Add zest and juice of 1 lemon Add dashy of whiskey Add salt and pepper Line terrine dish with streaky bacon Place the mixture in the dish and cover the top with streaky bacon Place in bain marie and in a pre heated oven for 1 and half hours at 150 degrees Leave to cool before serving.
