hendersons Posted June 14, 2012 Report Share Posted June 14, 2012 I don't know if any of you are interested in this but ill plug on anyway. I managed to pick up a load of satsumas cheap today. I was at a bit of a loss as to what to do with them so I thought I would try some marmalade. 9x satsumas 1/4 cup of lemon juice 4 cups of caster sugar 1/2 tsp butter A nice glug of brandy Wash then peel the satsumas. Keep the flesh and peel separate. Try to remove as much of the pith as possible and then finely slice the zest. Put the shredded zest into a heavy bottomed pan with two cups of water and boil for ten minutes. Drain the water and then put the zest back into the pan. In a food processor blitz the flesh and lemon juice together and then add to the zest. Bring the mix to the boil and then add the sugar. Stir constantly over a high heat until a temperature of 106 c is reached. Add the brandy. Put into sterilised jars and leave to cool.
