My way...........Pigeon breast marinated in red wine and thyme over night with a couple of crushed cloves of garlic. Take em out and pan fry them in LOTS of butter for 3 mins one 1 side, 2 mins on the other. Salt and pepper. Remove from heat and rest........ In same pan, some nice flat mushrooms, cut THICK and fried off in butter. Reduce marinade by 2 thirds.............add a good *** of butter to glaze, bit of game stock...reduce again till it coats back of spoon..
