UKPoacher Posted October 12, 2012 Report Share Posted October 12, 2012 1 lb of field mushrooms, heaped table spoon of butter or margarine, same of flour, small onion, two cloves of garlic, salt, pepper to taste, one small chillie pepper and 2 pts of vegetable stock. I made the stock while preparing the mushrooms. A small carrot, two small onion and a hefty slice of celeriac all chopped and simmered in 2 pints of water with a cube of veg' stock, salt and pepper added. Clean and chop the mushrooms and chop the other stuff. Melt the butter / marg' in a pan then add and stir in the mushrooms, garlic, chillie and flour. Cook over a moderate heat for a few minutes while stirring then add the stock and bring to the boil. Simmer for around ten minutes then blitz in the blender. We had some today.
