gibspoon Posted November 20, 2012 Report Share Posted November 20, 2012 (edited) I'm not really one for following recipes, so I thought I'd try some ad lib cooking. So... Finely chop up a garlic clove, fry in butter. Add saddle and back legs, season with rock salt and ground pepper. Add some basil, coating the meat. Fry without stirring for about 15 minutes on a medium heat. Let the juices flow! Add two chopped onions, and a dash of red wine vinegar. Throw in some more butter for a giggle. When the onions are semi ready, remove all the pan contents, leaving the juices in the pan. Using foil for each piece of meat, make a bed using the onions, put the meat on top. Put two heaped tablespoons of english mustard and two of syrup into the juice in the pan. Fry it gently till it melts. Drizzle the sauce into the foil wraps, close them at the top. Bang them in a low oven for twenty minutes. Served on your bed of onions with mash and peas. It came out REALLY tender. Next time I'll try and glaze the mustard and syrup sauce.....
