kenj
Many people have a chimenea on their patio for keeping warm after a BBQ. Mine has an added use as a hot fish smoker, usually taking under half an hour to transform the flavour of rainbow trout, which many consider "too fishy", my wife included. Instead of complaining about "all those fish" in her freezer, I'm asked when I am going again. (maybe she has another man?) It's also a man thing to prepare, so giving the little lady a rest from cooking. Give it a try. http://www.urbanfieldsportsman.com/index.php/hot-smoked-trout-in-a-chimenea/

kenj
Smoked mackerel and trout work well with rough ground black pepper. Get stuck in my teeth though.
