All I did was put 10 cartons in big brewing barrel 1kg btewing sugar and 15g of champagne yeast n left it 2week

you not gonna be far off that mark then....

Doing a quick guessimate take about 11g of sugar per 100ml apple juice then the 1kg you added gives 2.1kg for 10 litres would give a alcohol of about 12.6%
