Cosd Posted August 21, 2013 Report Share Posted August 21, 2013 This was a total experiment last night which turned out to be a delicious meal that my wife and girls really enjoyed. One of my daughters commented saying it was the best chicken she has ever had. We had a large whole chicken cut into pieces to throw on the BBQ. I'd cooked chicken once already, plain with salt and was lovely; Crispy on the outside and succulent inside. So wanted to try something different as I'm experimenting on the new gas BBQ. We had a left over bowl of Tzatziki (http://www.bbc.co.uk/food/recipes/tzatziki_13049) which my wife made on Sunday so poured it over the chicken pieces and put back in the fridge. It was a last minute thing so just marinated the chicken for around an hour. The results were excellent and definitely something I will do again, next time I will marinade at least a few hours. The chicken crisped up well with a hint of the mint and garlic, the Greek yoghurt and lemon were subtle and added a freshness to it too.
