Pigeon / Duck and onions.

I used this simple recipe for many years and loved it. Made it today for food, I had really forgotten how good it tastes.

The basis is the same as liver and onions.

Soften 2 large onions in duck fat in a frying pan then remove the onions.

Cut 4 pigeon breasts into thin slices, season with flour then fry till brown on the outside and pink in the middle. Then remove from the pan.

To the juices and fat that is left in the pan add some plain flour and fry till brown.

Then add some stock to make a gravy with. Then add the Pigeon and onions back to the pan to warm through.

There you have it Pigeon and onions.

This recipe works just as well with Duck and Hare in fact it will work with any dark game.

So quick to make and really does taste lovely.
