jcbruno Posted January 26, 2007 Report Share Posted January 26, 2007 After successfully murdering and butchering the first black bear of the season. You must try this stew it is superb. First of all you DON'T need the best cut of meat, but it does help if you use the tender butt area. Marinade your buttocks (well the meat peices that were first cut into chunks) in a mixture of garlic powder, real garlic, cilantro, red wine & steak spice for up to a day. Next brown the peices in a frying pan with a little olive oil. Put the peices in a roasting pan, add some carrots, onions, turnips, potatoes, some more red wine and the rest of your marinade, cook for about an hour or until the meat & veggies are cooked, add a little water & brown gravy mix, cook until the gravy thickens & Voila! a great redneck but classy stew.
