They are close to being wild and have benefits including very high levels of vitamins so have some uniqueness which may or may not be valued. I am considering selling retail and to pubs/ restaurants. So my query is if we have anybody who knows of the retail/ greengrocery/ pub/ restaurant trade. My first issue is the premium they may command over the same species but a mass produced version. I understand this could be subjective. The second is, for retail, what margin would they expect to make and then for kitchens, what discount they would expect against a retail price.
