sandersj89 Posted September 1, 2007 Report Share Posted September 1, 2007 Just had this for dinner and it was fantastic and will work well with duck breast too I am sure: For 2 people: 4 pigeon breasts 100ml port 100ml olive oil 100ml red wine 50ml brandy Chopped thyme Place the breasts in a bowl and add all the above to marinade for a couple of hours minimum. Turn the breasts from time to time. Heat a heavy based frying pan with a splash of olive oil until it is very hot and cook the pigeon breasts, 2 minutes per side and no more so it is pink inside. Remove the breasts and leave to rest on a warm plate. Into the frying pan spoon most of the marinade mixture to deglaze the pan, if you want sieve the marinade to remove the thyme leaves, keep the heat high to reduce it a little and then add a few spoonfuls of bramble jelly. Reduce over the heat and then spoon over the pigeon breast and serve with fresh veg, we had new potatoes, runner beans and carrots from the garden.
